Our Favorite "Really-yummy-and-not-so-guilty" Chunky Chocolate Chip Cookie

Boy that was a mouthful!


The first week back to school/work flew by! It wasn't bad. But I am already missing holiday breaks! The best part about the 2nd half of the year is all the holidays (e.g. July 4th, Labor Day, Halloween, Thanksgiving, Christmas and New Year's Day). Not so many in the 1st half of the year...although, we do celebrate more birthdays during this time, AND, the days are becoming longer! I can't wait till summer, when it's still bright outside at 8PM.


Well, we do have a few favorite things (desserts) to help us get through winter. One of them is this very very chocolaty chocolate chip cookies. I dare say these are deadly to dogs (can't eat any) and humans (can't eat anything else), but every human needs to take a dose every once in a while to keep living. There are so many different recipes to make chocolate chip cookies that I bet you can make a different version every day of the year without repeating! However, ours is not only extremely yummy and satisfying, it's also not that unhealthy. We stumbled upon "The Best Chewy Chocolate Chip Cookies" by Tasty, and accidentally cut back on the amount of butter and sugar. Since we all love dark chocolate, we used dark chocolate chips and chunks. The cookies turned out great! So now we have a healthy AND amazingly yummy cookie recipe.


Here is how we make it:


Ingredients

  • 1/4 cup butter, melted

  • 1/3 cup sugar

  • 1/3 cup brown sugar

  • 1 egg, beaten

  • 1/2 teaspoon vanilla extract

  • 1 cup all purpose flour

  • 1 teaspoon salt

  • 1/2 teaspoon baking soda

  • 1/2 cup chocolate chips

  • 1/2 cup chopped chocolate (any kind you like), aka chocolate chunks


Steps:

  1. Preheat the oven to 350 degree F;

  2. Whisk together butter with sugar and brown sugar, then add the egg, whisk well, add vanilla extract;

  3. To the wet ingredients, add flour, salt and baking soda, use a spatula to mix everything together;

  4. Add the chocolate chips and chunks, use your hands to mix everything together into a ball-shaped dough;

  5. Chill the dough in the fridge for 30 minutes or longer;

  6. When ready, scoop out the dough onto a baking sheet, 2 inches apart, bake for 12~15 minutes.

  7. Display the cookies on a cooling rack, and they will be gone in no time!

Watson's note: chocolate is poisonous to dogs. So do prepare some other treats for me when you humans make this cookie. Chicken fingers will be fine!
