Simple Everyday Yogurt Cake



This is a cake you can make and eat every day! It's light and healthy (made with Greek yogurt, almond flour and olive oil). The texture is dense and crumbly resembling that of a pound cake. The yogurt and olive oil give so much flavor to the cake. I usually add a little lemon zest to make the cake even more delicious and refreshing. Since berries are in season, dust a little powdered sugar and serve the cake with berries for breakfast, afternoon tea or dessert!


It's easy to make, of course. I mean it! My 10-year old made it from beginning to end while watching Superman.


So, give it a try!


Ingredients:

  • 4 large eggs

  • 1/3 cup sugar (add more if you prefer a sweeter cake)

  • 1 cup Greek Yogurt (any type is Ok, my favorite is whole fat)

  • 1 teaspoon vanilla extract

  • 1 cup all purpose flour

  • 1/2 cup almond flour

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1/2 cup olive oil

  • (optional) zest of one lemon

Steps:

  1. Preheat the oven to 350 F, prepare a 9 inch cake pan either by brushing oil on the bottom and side, or lining it with parchment paper.

  2. In a large bowl, beat the eggs, whisk in sugar, mix well, then add the yogurt and vanilla, and mix well.

  3. In a separate bowl, mix the dry ingredients: all purpose flour, almond flour, baking powder and salt; sift(optional), and mix in with the wet ingredients in step 2.

  4. Add olive oil and lemon zest (optional) and mix every thing well.

  5. Bake for 40~45 minutes, take out the baking pan and let it cool for at least 10 minutes before removing the cake.

  6. Serve the cake with powdered sugar, and/or fresh fruits, and/or whipped cream. Enjoy!
