A Very Italian Grilled Cheese Sandwich

...with ingredients from your local grocery store.


We love a good sandwich, for breakfast, lunch or dinner. It reminds us of traveling, and the food we pack for the road that's usually simple and tasty!

Many years ago, we were travelling in Italy. There were two things we ate almost every day, and became even more fond of at the end of the trip. You've guessed at least one of them right...sandwich, and gelato!


Sandwiches may seem simple to make, but a good sandwich requires great ingredients, that includes: freshly baked bread, tasty spread, and gourmet cheese. Deli meat is definitely a must for those carnivores in the house, but I'll talk about it another day. Now you certainly don't need to fly to Italy to find those nice ingredients, most of them can be found in local grocery stores. Here is a hot sandwich I made this morning for breakfast and boys' school lunches...with everything bought from my neighborhood grocery stores!


Ingredients:

From Trader Joe's - picture #1 above, from top left to bottom

  • "Unexpected Cheddar Cheese

  • "Creamy Toscano Cheese Soaked in Syrah"

  • GENOVA PESTO

  • Olive Tapenade

From Safeway

  • Ciabatta rolls - you can find these at Costco too in larger packages!

Steps:

  1. Turn on the oven and set it to "Broil"at 450 degree F.

  2. Cut cheese into slices.

  3. The ciabatta rolls are already sliced, simply split it into two halves, onto each half, spread the pesto, olive tapenade, and layer on top cheese slices.

  4. Beware of the hot oven and wear oven mitts! Toast the open-faced sandwiches in the oven for 4~5 minutes. Take them out, let them cool down and put two halves together.

Enjoy the hot grilled cheese, or wrap it up in wax paper and pack some for lunch!
