Skillet Pizza

It's the new year! Time to put 2020 behind us...and time to try a new way of making pizza!


Whether you love the crunchiness of a thin crust, or the heartiness of a deep dish pizza, you'll be satisfied with this one-of-a-kind cast iron skillet pizza!


Let's get to it!


Ingredients (makes one 12'' pizza):

  • Yeast: 1 teaspoon

  • Water: 200 mL, warm (40 degree F)

  • Sugar: 2 tablespoons

  • Bread flour: 2 cups, plus 1/4 cup for dusting

  • Olive oil: 30 mL

  • Salt: 1/2 teaspoon


Steps:

  1. In a large bowl, mix yeast, warm water and sugar, let it sit for about 10 minutes or until it appears foamy;

  2. Into the bowl, add bread flour, olive oil, then salt, mix well until blended, then knead the dough for about 5 minutes. The dough should be wet and slightly sticky. Cover the bowl with a towel, or plastic wrap. Leave the bowl in a warm spot and let the dough rise for about 2 hours, or until it doubles in size;

  3. Dust the dough with flour, transfer the dough to a big board, punch out the air, and use a rolling pin to knead the dough into a 12'' circle. Brush a cast iron skillet with olive oil, transfer the pizza dough to the skillet;

  4. Cover the pizza dough with a towel, and let it rise for about 1 hour;

  5. Preheat the oven to 450 degree F, layer your favorite toppings on the pizza, and bake it for 20~25 minutes or until the cheese is bubbly and the crust turns golden yellow.

Tips:

  1. In winter, to help the dough rise faster, turn on the oven for 2 minutes (yes, ONLY TWO minutes!), then turn it off. Put a bowl of water on the lower rack of the oven, and leave the dough in the oven to rise.

  2. Remember to wear oven mitts! The cast iron skillet is SUPER HOT!
